Cynara cardunculus. Non-GMO, Heirloom, Open Pollinated. This wild and untamed predecessor to the domesticated artichoke, the cardoon is a visually stunning ornamental that can be found growing as a decorative prickly weed in many parts of the United States.
Native to the Mediterranean, the cardoon was first popularly domesticated for its stunning and eye-catching purple heads, then eventually hybridized into artichoke. Cardoon is related to artichokes but is cultivated for the leaves and ivory white stems which have a mild artichoke flavor when picked early. The flavor grows more bitter as it matures.
Commonly used in salads, and also cooked in stews. Has a beautiful artichoke-like flower. Cardoon is a hardy perennial in zones 6-9.
For early starts, begin indoors 8-10 weeks prior to final frost date. Using 4 in. pots, plant 2-3 seeds ¼ in.
deep in fertile and well-drained soil. Seeds germinate in 10-21 days, thinning back to 1 plant per pot once true leaves are established. Transplant to a sunny and well-tilled spot in the garden, spaced out every 24-36 inches for maximum air flow and yields.
