For most infra-red thermometer, you are unsure of exactly what area you are measuring as it is calibrated for a specific distance. With the 8 beam you can clearly see if you are measuring a spot the size of a quarter or a dinner plate as the beams spread out. Secondly, this unit also has a very thin probe for internal measurments.
The thickness of the probe matters as an ultra-thin gives a much quicker reading and is better for something like a thin cut of fish. Even on a thick cut of meat, you don't want to be punching large holes with your thermometer.
